A Cooling Raita Recipe With A Twist

Well here’s our very own twist on a cucumber and mint raita using delicious Straight Up yoghurt from The Collective along with our crunchy cucumber crisps from a pack of our Nim’s Tomato & Cucumber crisps.

The talented chef and cookery writer, Anjali Pathak, gave us the idea of adding peanuts and radishes for extra crunch and we’ve added even more crunch with our cucumber crisps!

 

Ingredients:

Plain yoghurt (we used Straight Up from The Collective)

4-5 sliced radishes, sliced

Large handful of fresh mint, roughly chopped

Small handful of roasted salted peanuts

Nim’s cucumber crisps (taken from a pack of Nim’s Tomato & Cucumber)

Method:

The really great thing about this recipe is that you don’t need to be specific with measuring out quantities – it really is a case of a dollop of this and a handful of that. It is just a case of mixing the ingredients together. You can add a pinch of salt to season if you wish to.
