Frozen yoghurt bites with Nim’s

This is one of those recipes that is so simple and quick to put together that you don’t need to even know the quantities – it’s just add a dollop of this and a pinch of that and it still works out really well.

These frozen yogurt bites make a great snack or healthier option for dessert.

Ingredients:

Yoghurt (we used The Collective Scottish Raspberry yoghurt)

Cacao Powder (we used Aduna Super-Cacao powder)

Nut butter (optional – we used Almond butter in some of our frozen bites and left some without)

Nim’s Pineapple & Kiwi fruit crisps

You’ll also need some silicone muffin cases.

Method:

Simply dollop some of the yoghurt into the silicone muffin cases, followed by a sprinkle of cacao powder and a dollop of nut butter if desired. Push in a couple of Nim’s Pineapple & Kiwi crisps into each and then pop them in the freezer. You can have fun experimenting with different toppings and flavour combinations. For example, if you add the nut butter to the silicone cases first, then you get a tasty cheesecakey texture. Or try using seasonal fresh fruit like strawberries in the summer.

Don’t make them too big and then you should be able to eat them from frozen. If they do set too hard, then a 20 second burst in the microwave before you eat them usually does the trick.
